Leftover Turkey Ideas..some good..some bad and some ugly!
So how was your Thanksgiving? I hope it was wonderful! We had a great time plus it being my birthday made it even more fun! The Charlies gave me a new vacuum cleaner and a watch from Ben David Jewelers. I liked the watch best!
I am also happy to report we had all the traditional T-Day food groups represented. Some noteables would be the sweet potato casserole. This year I finally got it right ! I baked the sweet potatos and then scooped them out, added butter, brown sugar and pecan pieces and mini marshmellows. Then I twiced baked them and for the last 15 minutes put mini marshmellows on top. Very good. Mashed potatos not so good - I had heard you could use evaporated milk. My taters had a nasty yellowish hue plus they were sticky - yuck!
For the leftovers, I tried something I had seen on Diners, Drive Ins and Dives on the Food Network. The restaurant took cooked turkey and minced it up and added leftover dressing / stuffing and mashed potatos. They formed it in little balls and deep fried them. Hey, anything deep fried has to be good, right? WRONG! Don't try it!!! It was aweful!!! Poor Charlie ... he tried to like them. I am married to a good man!
I did however save myself with a find on All Recipes.com. I searched for ideas using leftover turkey and found a wonderful Turkey Tex Mex Soup. It was very easy and I just did it all up in the crockpot and let it cook on low for a few hours and then we dug in! Here's how to make it:
Big onion chopped
4 cups chopped cooked turkey
3 cloves of garlic chopped
2 tablespoons dried parsley
2 teaspoons chili powder
1/2 teaspoon cumin
1/2 teaspoon oregano
4 cups chicken broth
1 can tomato soup
1 28 oz can diced tomatos
1 cup salsa
1 14 oz can black beans drained
1 14oz can corn drained (or 2 cups frozen corn)
1/4 cup fresh cilantro
1/2 cup sour cream
Mix all the ingredients and cook on low. Serve with Mexican Cheese, Nacho Chips and more sour cream. It makes a great meal that doesn't taste like leftover Thanksgiving!
